For the St George Cellar (Szentgyörgy Pince) is more than just a restaurant: its vaulted arches evoke ages past, and its carefully adjusted lighting, live music, thoughtful service, the owner's welcoming smile and of course the specialities of the traditional Transylvanian cuisine create an atmosphere out of the ordinary.

What is Transylvanian cuisine, you may wonder. A medley of culinary customs and flavours from Asia, the Tartar, Austrian, Romanian and Balkan worlds characterised above all by its practicality. The Seklers' military pursuits meant that dining customs had to be adjusted to that lifestyle: potatoes (pityóka) and cabbage were readily available and could easily be stored for long periods, and the same is true of beans (fuszulyka).

Nor was meat, especially pork, beef and game from the manor grounds, lacking from the table. Mushrooms, cheeses and a variety of wild berries were abundant as well. It is this authentic atmosphere which the St George Cellar seeks to recreate for your

enjoyment, placing special emphasis on the quality of the dishes served. Unlike in the globalised fast food culture, what matters here first and foremost is the manner of preparation - suffice it to say that instead of using industrially pre-mixed spices, our cooks add freshly grown parsley and lovage to the dishes. There is no question that the art of cooking is still alive and well in these parts!

It is no surprise that over the years the St George Cellar has hosted numerous celebrities: heads of state, prime ministers, renowned actors, rock stars, artists, industrialists, chief executives. The latter are well aware that the best deals are made around a fine dinner, and tourists know that they cannot leave Sepsiszentgyörgy without having had at a fine meal here.
